1 Place bulgur in large bowl, mix in hot water; cover and let stand 15 mins.
2Sauté tahini till it becomes translucent, let cool. Wash vegetables; slice peppers very thin; clean onions, chop fine. Peel onion, chop fine. Combine peppers and onion with bulgur, wet hands and knead well.
3 Grate and add tomatoes with tomato and pepper pastes, pepper flakes, chopped basil and salt; knead well. Mix in tahini, crushed walnuts, minced green onions and parsley.
4 Form walnut-size pieces into ovalshaped patties by squeezing between palm and fingers. Serve with boiled grape and cabbage leaves, dry bean and onion salad (piyaz), and pickles and fresh vegetables like romaine, cucumbers, and tomatoes.
5Usually served diluted (like soup) as well as squeezed with finely chopped vegetables and pickles.
